Crockpot Candy Dr. Seuss Grinch Cookies

Grinch cookies are made with bright green-white chocolate and peanuts crockpot candy combined with red candy hearts. It will take about 15 minutes to prepare, and then you can let the crockpot do the rest. No extra decorating skills are necessary! The foliage color, and small ruby hearts at the top, are all you need. How to Make Grinch Cookies

The process is easy. Follow my full walkthrough with the important details:

Step 1: Layer the Ingredients in the Crockpot

Place the dry roasted peanuts at the bottom of a 2-quart crockpot. Next, add the white chocolate baking bar (it’s okay if it’s broken into a few pieces), the green Wilton Candy Melts, and the white almond bark. You don’t have to stir them now, just layer them. The chocolate and bark will melt down over the peanuts.

Step 2: Cover with the Paper Towel Trick

Before putting the lid on, cover the top of the crockpot with a paper towel. Ensure the towel is big enough to cover the entire opening. Then put the lid on top of the paper towel. This is the most important step in the recipe. The paper towel will absorb the condensation so no water will drip into the chocolate. Water and melted chocolate do not mix well. This is a very important step so don’t skip it.

Step 3: Cook on Low for 1 Hour

Make adjustments to your crockpot to set the temperature to low for an hour. Resist the temptation to peek. You release heat and prolong the process with each lid lift. Set a timer and leave it be.

Step 4: Check and Stir

Once an hour has passed, gently take the cover and paper towel off (make sure no condensation falls into the bowl while removing). Give the chocolate and peanut butter mixture another good stir. You are aiming for a smooth and uniform green mixture with no remaining solid chocolate pieces. If it’s all melted, good; you can move on to scooping. If a few pieces are still solid, put the cover and paper towel back on, keep on low, and stir every 15 minutes until the mixture is all melted. Keep an eye on it until the end, if you leave it on without watching it, the chocolate can burn quickly.

Step 5: Scoop the Clusters

Cover a large baking sheet or your countertop with parchment. Take your ¼ cup measuring cup or a cookie scoop to drop mounds of the chocolate-peanut mixture on the parchment. Try to work a little quickly – the mixture will start to set as it cools. You don’t need to be in a rush, but do try not to leave it in the crock pot for 30 minutes between scoops. If the mixture thickens up too much, turn the crock pot back to low for a minute to loosen it.

Step 6: Add the Candy Heart

After you scoop each cluster, gently press a Wilton Candy Heart into the top center. Do this while the chocolate is still warm — if you let the chocolate clusters set, the hearts will not stick. Only one heart in the center of each cluster. That’s your Grinch moment right there.

Step 7: Let Them Set

Let the clusters sit at room temperature for 2 to 3 hours to allow the white chocolate and almond bark to turn into a solid and shiny coating. Please do not place these in the fridge to cool because the temperature change will cause the chocolate to bloom (create a white powdery surface). After the clusters have fully set at room temperature for 2-3 hours, they will be firm enough to stack, bag, or store.

Helpful Tips

  • Use a 2-quart crockpot. This recipe is sized for a small crockpot. If you use a larger pot, the chocolate layer will be thinner and may cook unevenly or faster than expected. Stick with the right size or double the batch if you have a larger pot.
  • Don’t substitute the paper towel. It’s tempting to skip this or use a cloth towel — but the paper towel is specifically good at absorbing moisture, and a cloth can introduce other issues. One paper towel, draped over the opening, under the lid.
  • Work with a partner for scooping. One person scoops, one person places hearts. This keeps the process moving fast enough that the mixture doesn’t start to set in the pot while you’re still working.
  • The ¼-cup scoop makes large clusters. That’s intentional — they’re meant to look like a generous cookie or candy. If you want smaller clusters for gifting or for a cookie tray with a lot of variety, use a tablespoon-sized scoop and adjust your yield upward.
  • Wax paper works too. If you don’t have parchment paper, wax paper works just as well for setting the clusters. The chocolate won’t stick to either one.
  • The mixture in the crockpot can sit on warm for a while. If you need to pause mid-scooping, switching the crockpot to the warm setting (if yours has one) will keep the mixture from hardening in the pot without risking further cooking.

Variations

The base recipe is flexible once you understand the ratios. Here are some directions you can take it:

  • Different color themes. Swap the green candy melts for orange (Halloween), pastel pink or yellow (Easter), red (Valentine’s Day), or purple and gold (Mardi Gras). Same process, same quantities — just change the color.
  • Add pretzels. Replacing ½ cup of peanuts with broken pretzel pieces adds a salt-and-crunch element that works well in the green clusters. Reduce peanuts to 1½ cups and add ½ cup coarsely broken pretzels.
  • Mixed nuts. If you prefer a more varied nut base, use a mixed roasted nut blend in place of the peanuts. Cashews especially work well here — they’re milder and complement the white chocolate without competing with it.
  • White chocolate only version. Skip the candy melts entirely and use all white almond bark (20 oz. total) with white chocolate. You’ll lose the color, but the flavor is a little cleaner. Top with green-colored sprinkles if you still want the Grinch look.

  • A 2-quart slow cooker — The right size matters here. If you only have a 6-quart, the chocolate spreads too thin and can cook unevenly. A small dedicated crockpot is useful for candy making all year.
  • A ¼-cup cookie scoop — Faster and more consistent than a measuring cup. Spring-release scoops make quick work of dropping 30+ clusters.
  • Wilton Green Candy Melts — Sometimes hard to find in stores depending on the season. Worth having on hand if you know you’ll make these ahead of December.

Storage, Make-Ahead, and Gifting

Countertop Storage

Once completely set, keep the clusters in an airtight container at room temperature for 4 days. If you are stacking them, use parchment or wax paper to separate the layers so they don’t stick.

Freezer Storage

They can go in the freezer! Put completely cooled clusters in a zip-top freezer bag or a container that seals shut with some parchment paper between the layers. They can stay in the freezer for a maximum of 2 months. When you want to have some, take them out and place them on the counter for 20-30 minutes until they are room temp. They taste the same as fresh (and sometimes better!) and thaw very quickly!

Make-Ahead Timeline

This is one of the best recipes to prepare during the early part of December and freeze for later. The entire process is under two hours (mostly hands-off) and ready to store you can have 30 to 40 treats. If you are planning a holiday cookie exchange or gifting list, make a double or triple batch — the crockpot can handle a doubled recipe, though you may have to add 15 to 20 minutes of melt time.

Gifting

These pack nicely. Just a few clusters in a clear cellophane bag with a red or green ribbon is really all you need. They keep well in holiday tins with some parchment layered in. Also, because they are firm at room temp, they travel better than frosted sugar cookies or anything with soft icing.

Why did my chocolate seize up and get grainy?

This is nearly always a result of water entering the chocolate, with the most common cause being condensation dripping down from the lid. This is why the paper towel step is so crucial, as it will absorb the condensation before it drips back in. Unfortunately, if your chocolate seized, there’s not a great solution if your making clusters. You may try adding a small amount of coconut oil or vegetable shortening, but the texture probably won’t fully recover. It’s probably better to start over, using the paper towel method this time.

Can I use milk or dark chocolate instead of white?

Sure, but the melty greens won’t show up as well with the candy melts. Bases like white chocolate and almond bark are more on the lighter side which means the green will come through more. Using milk or dark chocolate will cause the green to be very dirty and all you will get are standard brown clusters. The chocolate-peanut combination is still very good and you’d just be missing the Grinch look.

My crockpot seems to run hot. What should I watch for?

If you own a crockpot that usually runs hotter, check the mixture at 45 minutes instead of the full hour. Burnt white chocolate scorches and smells bad, and once it burns, the batch is lost. If you are ever unsure, it is better to check early. Stirring at 45 minutes doesn’t hurt you if nothing is ready.

Can I add sprinkles or other toppings besides the candy heart?

Absolutely! You can use red and white sprinkles, green sugar, or small red cinnamon candies as alternate toppings. Be sure to add these as soon as you scoop, while the chocolate is still soft. Candy hearts give the classic Grinch look, but use whatever you have on hand or whatever works with your theme!

How many clusters does this recipe make?

Using a ¼ cup scoop to measure out the ingredients, you should get about 30 to 40 clusters (this count will vary based on how large your scoops are). If you use a smaller scoop (like 1 tbls), you should get about 60 to 70 smaller clusters. This recipe scales pretty easily! Are these actually cookies? They look more like candy.
