Chicken Bacon Ranch Casserole

Chicken, bacon, ranch, and cheese all baked on top of a bed of spaghetti. It comes together with ranch dressing mix, Velveeta, cream of chicken soup, crunchy bacon, shredded chicken, and pasta.

My family requests this casserole for dinner every couple weeks.

The Cozy Dinner Story

This recipe became a regular at our house because of the baseball season. With two practices a week and tournaments nearly every weekend from April to June, I needed dinners that either needed to be prepped and cooked in 30 minutes, or I needed to have them in the fridge ready to reheat.

I solve both problems with chicken bacon ranch casserole. I make a double batch on Sunday: one for Sunday dinner and I freeze the other for the worst week of the month. The kids even asked for this for school birthday lunches, which is the biggest compliment a casserole can get.

If you use rotisserie chicken, active prep time is about 15 minutes. It serves 6 to 8 generously, and the leftovers reheat wonderfully.

What Goes In and Why Each Thing Matters

Spaghetti (16 oz., cooked al dente): One pound of traditional spaghetti, cooked for 1 to 2 minutes less than the time listed on the package directions. Pull it early as it finishes cooking in the oven. Fully cooked pasta will become mushy. You can also substitute penne, ziti, or rotini.

Cream of chicken soup (2 cans, 10.75 oz. each): Use it condensed, straight from the can. Don’t add water. This is the base of the sauce and it should be thick.

Velveeta cheese (cubed, 16 oz.): Yes, Velveeta. Real cheddar breaks and goes grainy when baked into a cream sauce. Velveeta melts smoothly and stays that way. Cut into 1-inch cubes, it will melt better when stirred into the broth.

Chicken broth (1 cup, warmed): Don't forget to warm it up – cold broth will slow down how fast the Velveeta cheese melts! Use low-sodium chicken broth since the soup, the ranch mix, and the bacon bits will add salt.

Ranch dressing mix, 1 packet (1.5 oz.) Please use the entire packet. Not half. Not "a little less because it seems like a lot." Half a packet gives you ranch flavor that's almost there, but not quite. The full packet is the key to making this dish unmistakably ranch.

Cooked chicken (3 cups, shredded): A rotisserie chicken is one of the easiest options — one bird yields about 3 cups. If you're meal prepping, shredded leftover chicken from another meal works too. Just make sure it is cooked chicken before it goes in.

Bacon (5 to 7 slices, cooked and diced): Cook the bacon first — uncooked bacon won't render fat in 30 minutes at 350°F and will leave you with rubbery strips. Instead, bake the bacon on a sheet pan at 400°F for 15 minutes, let it cool, and then chop it.

Sharp cheddar cheese (1 cup, grated): Goes on top for the last layer. Sharp gives more flavor; mild works fine. This is the cheese that browns and bubbles on top — not the one in the sauce.

How to Make Chicken Bacon Ranch Casserole

Set your oven to 350°F. Make sure to cook the spaghetti to an al dente texture, then drain it and put it to the side. If you do not have already prepared bacon, you can bake it in the oven for 15 minutes at 400°F. Let it cool, then chop it — the bacon and oven preheating can be done at the same time.

In a large mixing bowl, add cooked spaghetti, 2 cans of cream of chicken soup, cubed Velveeta, chicken broth (warmed), ranch mix, and cooked shredded chicken. Mix thoroughly.

At first, the cubes might look a bit strange and chunky; the Velveeta cheese may not have melted completely. Just keep stirring, the melted cheese will come together with the broth, which does most of the work. In a few minutes, the sauce will be pretty smooth!

Evenly distribute the mixture in a 9×13 baking dish. Layer the shredded cheddar on top. Next, add an even sprinkling of the bacon pieces on top of the cheese.

Bake uncovered for 30 minutes at 350°F. It should be bubbling around the edges, not just the center. Look for the cheese on top to be fully melted and start to brown in patches.

Call it good and let the casserole sit for 5 to 10 minutes before serving. A resting period will also allow the sauce to thicken, and make scooping easier. Enjoy hot with garlic bread or a plain leafy green salad.

How It Keeps and the Freezer Strategy

You can keep leftovers in the fridge for four days as long as they are covered. To reheat leftover portions, place them in the microwave for 90 seconds. If you need to reheat an entire pan, warm it in the oven (set to 325°F) for 15 to 20 minutes. Be sure to cover the pan with foil.

To prep in advance: you can put together the casserole and refrigerate for 24 hours without baking. Just cover with foil and store in the fridge. You will need to add an extra 10 to 15 minutes to the time as you will be starting with a cold dish.

This casserole can be made ahead of time and frozen without baking. To bake from the freezer, set the oven to 350°F and bake for 60 to 75 minutes; cover with foil for the first 45 minutes. I always make two casseroles and freeze one for when practice nights are the most hectic.

Chicken Bacon Ranch Casserole FAQ

Can you use real cheddar instead of Velveeta? Not really. Real cheddar goes grainy and breaks apart when it is baked with a cream sauce. Instead of a smooth and creamy sauce, you'll get a casserole that tastes fine but has an oily and separated texture. The most reliable substitute is white American cheese from the deli. If you use real cheddar anyway, the casserole is still fine to eat, just not the same.

Which kind of chicken should I use? If you want to make things easier, you can use rotisserie chicken. One rotisserie chicken gives about 3 cups of pulled chicken. Leftover chicken from other meals works perfectly. You can also cook 2 chicken breasts specifically for this (oven at 375°F for 25 minutes, or Instant Pot for 15 minutes).

Can I use another shape of pasta? Yes, you can use penne, rotini, ziti, elbow macaroni, etc. Just make sure to use the same total weight of 1 pound. Keep in mind that shorter pasta can be easier to scoop and serve.

How do I keep the casserole from drying out? Cook the spaghetti to an al dente texture, since it will absorb sauce in the oven — pulling it early keeps everything from getting mushy. Use warm broth so the Velveeta can melt thoroughly instead of remaining in chunks. Make sure not to overbake. The right time to bake it is 30 minutes at 350 degrees.

Can I add vegetables? Yes. Stir in 2 cups of frozen peas, broccoli florets, or sautéed mushrooms before baking. They stretch the casserole and add something green without changing the flavor.

Cook the pasta 1 to 2 minutes shy of package directions so it does not get mushy in the oven. Warm the chicken broth so the Velveeta melts more easily. Cook the bacon before adding it to the casserole. Let the casserole rest before serving so the sauce thickens.
