Confession: I’m a huge fan of any recipe that takes minimal effort but looks and tastes like I spent hours slaving over it. Case in point, any recipe made in the slow cooker.

There are tons of fabulous crock pot recipes out there, so I’ve narrowed down the list of our favorite slow cooker recipes that will fool people into thinking you’ve been working hard all day in the kitchen.

I’ve been collecting recipes like crazy recently, we have taco night once a month at my house and the teens LOVE them, and realized I have tons of easy crockpot recipes! Some are new finds for me, others have been family favorites for YEARS.

Either way, I’ve been using my slow cooker nonstop lately, so thought it was time to get all of those recipes posted!

1) Crock Pot Beef and Noodles▼

1) Crock Pot Beef and Noodles

Prep Time15 mins
Cook Time8 hrs
Total Time8 hrs 15 mins
Servings8 servings
IngredientsCooking Instructions

Ingredients

  • 2 pounds chuck roast
  • 2 tablespoons vegetable oil (for searing)
  • 1 tablespoon steak seasoning (Montreal Steak Seasoning recommended)
  • salt and pepper (to taste)
  • 1/2 onion (diced)
  • 4 cups water
  • 4 heaping teaspoons Better than Bouillon concentrated beef base (start with 3, taste, add 4th if needed)
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon minced garlic
  • 24 oz bag Reames frozen egg noodles

Cooking Instructions

  1. Pat the chuck roast dry with paper towels. Season all over with steak seasoning, salt, and pepper.
  2. Heat vegetable oil in a large skillet over medium-high until shimmering. Sear the roast 2–3 minutes per side until a dark crust forms. Set aside.
  3. Place the seared roast and diced onion in a 6-quart crockpot. Cover and cook on low 6–8 hours. Do not add any liquid at this stage.
  4. Remove the roast and shred with two forks, discarding any large pieces of fat. Return shredded beef to the crockpot.
  5. Whisk together water, Better than Bouillon, Worcestershire sauce, and minced garlic until the bouillon is dissolved. Pour over the shredded beef and stir to combine. Set crockpot to low and simmer 30 minutes.
  6. Bring a large pot of salted water to a boil. Cook Reames frozen egg noodles per package directions, about 20–40 minutes. Drain.
  7. Stir noodles into the crockpot. Taste the broth and adjust salt if needed. Serve hot in bowls or over mashed potatoes.
Notes: Start with 3 teaspoons of Better than Bouillon, taste the broth, and add the 4th only if you want more depth. The broth can get salty — the bouillon, steak seasoning, and Worcestershire all add salt. Cook the noodles separately and stir them in just before serving. Freeze the beef and broth without noodles for up to 3 months — cook fresh noodles when you reheat.

When my husband sees this recipe in my recipe queue his eyes light up because he knows dinner is going to be good. In fact, this is probably the recipe I make more often October thru March than any other.

Basically, chuck roast + seasonings + veggies + broth + 8 hrs. on low = fall apart tender beef. Then toss in egg noodles and BAM.

A thick and yummy one pot dinner the kids LOVE. Prep time: about 8 minutes and then leave it alone, well, except for Gigi who hangs around hoping you’ll drop something.

2) Beef Stew▼

2) Beef Stew

Prep Time25 mins
Cook Time8 hrs
Total Time8 hrs 25 mins
Servings8 servings
IngredientsCooking Instructions

Ingredients

  • Ingredients
  • 2 pounds stew meat
  • 1/2 tablespoon vegetable oil
  • 1 tablespoon salt
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 2/3 cup diced carrots
  • 2 stalks celery (diced)
  • 2 Russet potatoes (peeled and diced)
  • 46 ounces tomato juice
  • 2 cups chicken broth
  • 1 bay leaf
  • 1/2 tablespoon sugar
  • 1/2 cup quick barley

Cooking Instructions

  1. Instructions
  2. Toss the stew meat with salt, basil, pepper, and garlic powder until evenly coated.
  3. Heat vegetable oil in a skillet over medium-high heat. Brown the stew meat in a single layer, working in batches if needed.
  4. Transfer the browned beef to the slow cooker. Add the tomato juice, chicken broth, carrots, celery, potatoes, bay leaf, and sugar. Stir to combine.
  5. Cover and cook on low for 7 hours without lifting the lid.
  6. Stir in the quick barley, replace the lid, and cook on low for 1 more hour.
  7. Remove the bay leaf before serving. Ladle into bowls and serve with rolls or crackers.
Notes: Cut large pieces of stew meat so they cook evenly. Brown the beef in batches if needed so it sears instead of steams. Add quick barley only during the final hour so it does not overcook. Remove the bay leaf before serving.

This one is similar to the above in that chuck roast + veggies + seasonings + broth + 8 hrs. on low = fall apart tender beef in a thickened (trust me) gravy that tastes just like you spent hours on the stove making stew. Oh, and you didn’t brown anything, it’s magic.

My daughter loves soup and currently has a crush on the Panera version. This is my go-to when she’s craving something soupy but I’m craving something a bit heartier.

I like to make it on Sunday’s when we’re headed out because it’s waiting when we get home. This one tastes even better the next day…IF there are leftovers which is rare because my husband loves to sneak in during witching hour to scarf down a bowl.

3) Slow Cooker Pulled Pork▼

Recipe card

3) Slow Cooker Pulled Pork

Prep Time15 mins
Cook Time8 hrs
Total Time8 hrs 15 mins
Servings4 sandwiches
IngredientsCooking Instructions

Ingredients

  • 2 pounds boneless pork roast or boneless pork riblets
  • 1/2 bottle barbecue sauce (about 9 ounces)
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 cup packed light brown sugar (optional)
  • Hamburger buns (for serving)

Cooking Instructions

  1. Pour about one-quarter of the barbecue sauce into the bottom of the slow cooker.
  2. Place pork roast on top of the sauce, fat-side-up if it has a visible fat cap.
  3. Pour remaining barbecue sauce over the pork. Sprinkle dry mustard, onion powder, garlic powder, and brown sugar over the top.
  4. Cover and cook on Low for 6 to 8 hours, until pork shreds easily with a fork.
  5. Shred pork with two forks and mix it back into the cooking liquid and sauce.
  6. Taste and adjust seasoning or add more barbecue sauce if needed.
  7. Serve warm on hamburger buns.
Notes: Use a barbecue sauce you like because it is a major part of the flavor. The sauce layer under the pork helps prevent scorching and keeps the roast moist. Store leftovers with cooking liquid mixed in so reheated pork does not dry out. Pulled pork freezes well for up to 3 months in meal-sized portions.

You can use this for sandwiches, on a bed of rice, in tacos, you name it. Throw a pork shoulder in the crock pot with some seasonings and let it simmer on low for 8-10 hrs.

Dinner is waiting when you get home and if you’ve been home all day, just dig right in, that’s what we do on the first bite, straight out of the crock pot. This one is a bit more involved in that you have to shred it with 2 forks before serving.

We made this recipe last summer for my son’s birthday and LOVED it because my effort wasn’t slaving over the hot stove but wandering the aisles at Target. It was PERFECT for a summer party.

4) Crockpot Lasagna▼

Recipe card

4) Crockpot Lasagna

Prep Time25 mins
Cook Time4 hrs
Total Time4 hrs 15 mins
Rest Time15 mins
Servings8 servings
IngredientsCooking Instructions

Ingredients

  • Ingredients
  • 1/2 pound Italian sausage
  • 1/2 pound ground beef
  • 45 ounces spaghetti sauce
  • 20 ounces small-curd cottage cheese
  • 1 large egg (beaten)
  • 1/2 cup shredded Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 2 cups shredded mozzarella cheese (divided)
  • 9 regular lasagna noodles (broken in half)

Cooking Instructions

  1. Instructions
  2. Brown Italian sausage and ground beef in a skillet over medium-high heat until no pink remains. Drain well.
  3. Stir spaghetti sauce into the browned meat and warm through.
  4. In a bowl, combine cottage cheese, egg, Parmesan, and Italian seasoning until uniform.
  5. Spray a 6-quart slow cooker. Layer one-third meat sauce, 3 broken noodles, half the cottage cheese mixture, and 1 cup mozzarella.
  6. Repeat with one-third meat sauce, 3 noodles, remaining cottage cheese mixture, remaining 3 noodles, and final one-third meat sauce.
  7. Cover and cook on low for 4 hours, until noodles are tender.
  8. Sprinkle remaining 1 cup mozzarella on top during the last 30 minutes.
  9. Turn off slow cooker and let lasagna rest 10 to 15 minutes before serving.
Notes: Use regular dry lasagna noodles, not no-boil noodles, for the best slow cooker texture. Do not reduce the sauce because the dry noodles need that liquid. Let the lasagna rest before serving so the layers firm up. Avoid lifting the lid during cooking because it adds time.

Ok, so you’re thinking that’s no lasagna. And you’re right.

It’s better than no lasagna, trust me. Dry lasagna noodles + meat sauce + ricotta cheese + a few other ingredients = lasagna-ish plates that fool people into thinking you slaved over a hot oven and had to wash a lasagna pan afterwards.

We made it on Tuesday night when I’m looking for an EASY meal and my husband thought it was fancy, though I think he thought all of these recipes were fancy. Prep time about 10 mins, crock pot time 3-4 hrs. on low.

Win/Win.

5) Crock Pot French Dip Sandwiches▼

Recipe card

5) Crock Pot French Dip Sandwiches

Prep Time15 mins
Cook Time10 hrs
Total Time10 hrs 15 mins
Servings6 sandwiches
IngredientsCooking Instructions

Ingredients

  • 3 lbs chuck roast
  • 2 cans Campbell’s French Onion Soup (condensed, undrained)
  • 1 can Campbell’s Beef Consommé (undrained)
  • 6 hoagie rolls
  • 12 slices provolone cheese (2 slices per sandwich)

Cooking Instructions

  1. Instructions
  2. Heat vegetable oil in a large skillet over medium-high heat. Sear chuck roast on all sides, about 3 to 4 minutes per side.
  3. Transfer seared roast to a 6-quart slow cooker. Add French onion soup and beef consomme without diluting.
  4. Cook on high for 4 hours or low for 8 to 10 hours, until beef is fall-apart tender.
  5. Transfer roast to a bowl and discard large pieces of fat. Shred beef with two forks.
  6. Strain cooking liquid into a saucepan and simmer over medium heat until reduced by half, about 10 to 15 minutes.
  7. Pile shredded beef on hoagie rolls and top with provolone.
  8. Broil on low until cheese is melted and lightly browned. Serve immediately with au jus for dipping.
Notes: Use chuck roast because leaner cuts can dry out during the long cook. Do not dilute the canned soups or the au jus will be weak. Reduce the cooking liquid by half for a richer dipping sauce. Watch sandwiches closely under the broiler because cheese browns quickly.

Throw a chuck roast into the crock pot along with beef broth, a can of condensed onion soup and some seasonings and walk away. When you come back, shred the fall-apart tender beef, pile it high on a roll and serve the juices on the side to pour on your sandwich .

My husband loves a good hoagie so I’m constantly looking for sandwich ideas to serve on these rolls.

6) Philly Cheese Steak Crock Pot Recipe

Prep Time15 mins
Cook Time8 hrs
Total Time8 hrs 15 mins
Servings6 sandwiches
IngredientsCooking Instructions

Ingredients

  • 2 1/2 to 3 pounds beef round steak (sliced thin)
  • 2 green peppers (sliced thin)
  • 1 onion (sliced thin)
  • 1 envelope dry Italian dressing mix
  • 2 cups beef stock
  • 2 teaspoons black pepper
  • 3 teaspoons garlic salt
  • 6 hoagie buns
  • 12 slices provolone cheese

Cooking Instructions

  1. Spray the crock pot with cooking spray.
  2. Cut beef round steak into thin slices and brown briefly in a hot pan for color.
  3. Add browned beef, green peppers, onion, beef stock, garlic salt, black pepper, and Italian dressing mix to the crock pot. Stir to combine.
  4. Cover and cook on Low for 8 hours, until beef is tender.
  5. Line a baking sheet with foil or parchment.
  6. Spoon the beef and vegetable mixture onto sliced hoagie buns.
  7. Top each sandwich with 2 slices of provolone cheese, overlapping as needed.
  8. Bake at 350°F or broil on low for a few minutes, just until the cheese melts.
  9. Serve warm.
Notes: Brown the beef briefly before slow cooking if you have time; it adds more flavor than adding raw beef straight to the crock pot. Use a slotted spoon when filling buns so they do not get soggy. The beef mixture can be made a day ahead and reheated before assembling sandwiches. Leftovers keep refrigerated for up to 4 days.

Peppers + onions + beef from Aldi for a steal + secret ingredient of Worcestershire sauce = cheesesteaks that will have people thinking you’ve been working all day in the kitchen. Serve on hoagie rolls with provolone or Cheez Whiz (ho ho).

7) Crock Pot Maid Rites (Iowa Loose Meat Sandwiches)

Prep Time10 mins
Cook Time4 hrs
Total Time4 hrs 10 mins
Servings8 sandwiches
IngredientsCooking Instructions

Ingredients

  • 2 pounds lean ground beef (uncooked)
  • 1 cup warm water
  • 3/4 tablespoon dried minced onion
  • 1 1/2 tablespoons packed light brown sugar
  • 3/4 teaspoon low-sodium beef base
  • 3/4 teaspoon low-sodium chicken base
  • 1 1/2 tablespoons apple cider vinegar
  • 1 1/2 tablespoons Worcestershire sauce
  • 3/4 tablespoon low-sodium soy sauce
  • 8 hamburger buns
  • Ketchup (mustard, and pickles, for serving)

Cooking Instructions

  1. Set slow cooker to High. Add ground beef and break it into smaller chunks.
  2. In a measuring cup, combine warm water, dried onion, brown sugar, beef base, chicken base, apple cider vinegar, Worcestershire, and soy sauce. Stir until dissolved.
  3. Pour seasoning liquid over the beef and stir until the meat is coated.
  4. Cover and cook on High for 1 hour.
  5. Remove lid and break the meat into very small crumbles with a meat chopper or firm spatula.
  6. Turn slow cooker to Low and cook uncovered for 2 1/2 to 3 hours, stirring occasionally and breaking up any clumps.
  7. Continue cooking until most liquid has evaporated and the beef is finely crumbled with a glossy sheen.
  8. Serve a generous spoonful on warm hamburger buns with ketchup, mustard, pickles, or other toppings.
Notes: Use lean ground beef, ideally 90/10 or 93/7, so the meat stays juicy without getting greasy. Do not skip the uncovered cook-down because that step concentrates the flavor and creates the loose meat texture. Leftover meat keeps refrigerated for up to 4 days or frozen for up to 3 months. Reheat with a splash of broth or water.

If you’ve never had Maid Rites you’re missing out. Ground beef + seasonings + beef broth + some other goodies = Iowa’s best kept secret.

Serve on hamburger buns and eat standing up in the diner like a real Iowan, with no ketchup, we promise. We made this recipe a couple of times when we needed to feed a large group…one time for Easter and another time at a catering event at my daughter’s school along with “the pineapple chicken”, but that’s another blog post.

8) Crockpot Shredded Chicken Tacos

Prep Time5 mins
Cook Time6 hrs
Total Time6 hrs 5 mins
Resting Time10 mins
Servings4 servings
IngredientsCooking Instructions

Ingredients

  • 1 1/2 to 2 pounds boneless skinless chicken thighs or breasts
  • 1 packet taco seasoning (about 1 ounce, or 2 tablespoons homemade taco seasoning)
  • 1 jar salsa (16 ounces, medium or mild, or 1 can Rotel plus 1/2 cup chicken broth)
  • Juice of 1/2 lime (optional but recommended)
  • Fresh cilantro (optional)
  • Flour or corn tortillas (for serving)
  • Toppings of choice (such as shredded cheese, sour cream, lettuce, pico de gallo, avocado, jalapeños, and hot sauce)

Cooking Instructions

  1. Place chicken in the bottom of the slow cooker in as close to a single layer as possible.
  2. Sprinkle taco seasoning evenly over the chicken.
  3. Pour salsa, or Rotel plus broth, over the chicken until mostly coated.
  4. Cook on Low for 4 to 6 hours, until chicken pulls apart easily with a fork. Check breasts closer to 4 hours and thighs closer to 5 to 6 hours.
  5. Shred the chicken directly in the slow cooker with two forks.
  6. Replace the lid and let the shredded chicken rest in the sauce for 10 minutes so it absorbs the liquid.
  7. Squeeze lime juice over the chicken, stir, taste, and adjust seasoning if needed. Stir in cilantro if using.
  8. Serve in warm tortillas with your favorite toppings.
Notes: Store leftover shredded chicken with the juices so it stays moist. Reheat gently with a splash of chicken broth if needed. The chicken freezes well with the sauce for up to 3 months. For meal prep, add the chicken, seasoning, and salsa to the slow cooker insert the night before, refrigerate, then cook the next day.

Chicken breasts, salsa, taco seasoning, lime juice. Dump in slow cooker, cook all day on low, shred.

You can make a bunch of different dishes from it, but my family’s absolute FAVORITE is taco night!! That’s the night the teens look forward to the most.

It takes almost no effort to make, is super inexpensive and feeds a lot of people! Use for tacos, nachos, burrito bowls, etc.

You’re working SO hard cooking dinner all day, Gigi hangs around hoping something will fall. LOL.

9) Buffalo Chicken Crock Pot Sandwiches▼

9) Buffalo Chicken Crock Pot Sandwiches

Prep Time5 mins
Cook Time7 hrs
Total Time7 hrs 5 mins
Servings6 sandwiches
IngredientsCooking Instructions

Ingredients

  • Ingredients
  • 4 boneless skinless chicken breasts
  • 12 ounces Frank’s Buffalo Sauce
  • 8 ounces cream cheese (full-fat preferred)
  • 1 packet Hidden Valley Ranch Seasoning
  • 6 hamburger buns (toasted if desired)
  • blue cheese, ranch, celery, or red onion (optional toppings)

Cooking Instructions

  1. Instructions
  2. Lay the chicken breasts flat in the bottom of the slow cooker.
  3. Pour the full bottle of buffalo sauce over the chicken. Place the block of cream cheese on top and sprinkle the ranch seasoning over everything.
  4. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is tender.
  5. Shred the chicken directly in the slow cooker with two forks. Stir until the cream cheese and sauce become a uniform creamy orange coating.
  6. Taste and add a pinch of salt or a splash more buffalo sauce if desired.
  7. Toast the buns, pile the shredded buffalo chicken on top, and serve immediately with optional toppings.
Notes: Use Frank’s buffalo sauce for the classic buffalo wing flavor. Cook on low for the juiciest chicken if you have time. Do not lift the lid repeatedly during cooking because it lets moisture and heat escape. Toast the buns so they hold up better under the saucy filling.

This recipe takes minimal effort, but WOW!! Such an impressive meal!!

My son asks for these often. Chicken breasts, butter, buffalo sauce.

Cook all day, shred, put on hoagie roll with ranch or blue cheese. My husband loves them.

You can also serve on a baked potato, in wraps, etc.

10) Crockpot Chicken Sandwiches (Crack Chicken)▼

Recipe card

10) Crockpot Chicken Sandwiches (Crack Chicken)

Prep Time15 mins
Cook Time6 hrs 15 mins
Total Time6 hrs 15 mins
Servings8 sandwiches
IngredientsCooking Instructions

Ingredients

  • Ingredients
  • 4 boneless skinless chicken breasts (about 2 pounds)
  • 8 ounces cream cheese (softened)
  • 1 packet ranch dressing mix
  • 8 strips bacon (cooked and crumbled)
  • 2 cups shredded cheddar cheese
  • green onions (for serving)
  • hamburger buns (toasted if desired)

Cooking Instructions

  1. Instructions
  2. Place chicken breasts in a single layer in a 4-quart or larger slow cooker. Set softened cream cheese on top.
  3. Sprinkle the ranch packet over everything. Cover and cook on low for 6 hours.
  4. While chicken cooks, cook bacon until crisp, then cool and crumble.
  5. Shred the chicken into the cream cheese sauce with two forks or a hand mixer on low.
  6. Add shredded cheddar and crumbled bacon. Cover and let sit on warm for 15 minutes, until cheese melts.
  7. Stir to combine, scatter green onions over the top, and serve hot on buns.
Notes: Soften the cream cheese so it melts evenly. Cook the bacon before adding it because raw bacon does not render well in the slow cooker. Toast the buns so they hold up to the creamy filling. A hand mixer on low can shred the chicken quickly right in the crockpot.

I first made these sandwiches last spring. They’re basically chicken breasts cooked in the slow cooker with cream cheese, ranch seasoning, cheddar and optional bacon.

My daughter brought them to a get together at her school. There were NO leftovers and THREE moms asked her for the recipe.

It’s become one of the most requested recipes on the blog. You can also make Crack Chicken Pasta, too!

11) Crockpot Hawaiian Chicken▼

11) Crockpot Hawaiian Chicken

Prep Time10 mins
Cook Time6 hrs
Total Time6 hrs 10 mins
Servings4 servings
IngredientsCooking Instructions

Ingredients

  • Ingredients
  • 20 ounces chicken tenderloins (cut into 1- to 2-inch pieces)
  • 1/2 cup pineapple juice
  • 1/4 cup brown sugar
  • 1 ounce soy sauce (about 2 tablespoons)
  • white rice (for serving)
  • sesame seeds (optional)

Cooking Instructions

  1. Instructions
  2. Cut chicken tenderloins into 1- to 2-inch pieces and place in the slow cooker.
  3. In a measuring cup or small bowl, stir together pineapple juice, brown sugar, and soy sauce until mostly dissolved.
  4. Pour sauce over chicken. Cover and cook on low for 6 hours.
  5. Serve chicken over cooked white rice and spoon extra sauce from the slow cooker over the top.
  6. Sprinkle with sesame seeds if desired.
Notes: Chicken tenderloins cook evenly and stay moist, but chicken breasts or thighs can also work if cut into similar pieces. Do not skip the pineapple juice because it adds both flavor and tenderness. Spoon the sauce from the bottom of the slow cooker over the rice. Reduce brown sugar to 2 tablespoons if you prefer it less sweet.

This is one of those dishes where you don’t have to do a thing in the morning. Add all ingredients, including pineapple juice, soy sauce, brown sugar, and garlic, to crock pot with chicken and walk away.

When you get home from work, shred or cut up chicken and serve over rice. Takes about 10 minutes and doesn’t heat up the kitchen.

Perfect for a hot summer day when you don’t feel like turning on the oven. My kids call it “the pineapple chicken”.

12) Slow Cooker Crack Chicken Pasta

Prep Time20 mins
Cook Time4 hrs 20 mins
Total Time4 hrs 40 mins
Servings6 servings
IngredientsCooking Instructions

Ingredients

  • 5 cups shredded rotisserie chicken
  • 1 can cream of chicken soup (10.5 ounces)
  • 8 ounces Velveeta (cubed)
  • 2 cups chicken broth
  • 1 cup water
  • 1 packet Hidden Valley Buttermilk Recipe Ranch dry seasoning
  • 3 cups uncooked penne or mostaccioli pasta
  • 1 1/2 cups mild cheddar cheese
  • 1 cup bacon pieces

Cooking Instructions

  1. Shred or dice rotisserie chicken until you have about 5 cups.
  2. In a 4-quart slow cooker, combine chicken, ranch packet, cream of chicken soup, chicken broth, water, and cubed Velveeta.
  3. Cover and cook on High for 3 hours.
  4. Add uncooked pasta and stir well.
  5. Cover and cook on High for 20 more minutes.
  6. Stir again, replace the lid, and continue cooking until pasta is tender, checking every 10 to 15 minutes.
  7. Stir in mild cheddar cheese and bacon pieces.
  8. Let sit a few minutes so the sauce thickens.
  9. Serve warm.
Notes: Do not add the pasta at the beginning or it will turn mushy. Stir after adding pasta so it cooks evenly in the sauce. Slow cookers vary, so start checking the noodles after 20 minutes. Leftovers thicken as they cool; reheat with a splash of chicken broth or milk to loosen the sauce.

If you love the Crockpot Crack Chicken recipe, this is a must try as well!! Basically you’re cooking the same ingredients, like chicken, bacon, cream cheese, and ranch dressing mix, but adding pasta at the end.

It’s super easy to make and kids LOVE it. Feeds six people.

My husband ate it for breakfast the next morning!! Cold.

LOL.

13) White Bean Turkey Chili

Prep Time15 mins
Cook Time2 hrs
Total Time2 hrs 15 mins
Servings8 servings
IngredientsCooking Instructions

Ingredients

  • 1/2 onion (chopped)
  • 3 garlic cloves (minced)
  • 1 pound shredded or cooked turkey (or ground turkey)
  • 2 teaspoons ground cumin
  • 1 teaspoon ground oregano
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon pepper
  • 1 7- ounce can chopped green chiles
  • 4 cups chicken broth
  • 2 cans Northern white beans (drained and rinsed)
  • 1/2 cup sour cream
  • Jack cheese (Fritos, and jalapeños, for serving)

Cooking Instructions

  1. Combine onion, garlic, turkey, cumin, oregano, cayenne, pepper, green chiles, chicken broth, and drained beans in a pot or slow cooker.
  2. Simmer on the stove for 2 hours, or cook in the slow cooker on Low for 4 hours.
  3. Just before serving, stir in sour cream.
  4. Do not boil after adding sour cream.
  5. Serve with Jack cheese, Fritos, and jalapeños on the side.
  6. Keep warm in the slow cooker or on Low on the stove.
Notes: Do not bring the chili to a full boil after adding sour cream or it can separate. The chili thickens as it sits; add a splash of chicken broth when reheating. Freeze before adding sour cream for the best texture, then stir in fresh sour cream after reheating. Refrigerate leftovers up to 4 days.

If your husband is anything like mine, there’s certain times of year he’ll call for hearty, manly meals that consist of beef. LOL.

I’m happy to oblige, but I’m not about to spend hours slaving away in the kitchen. This recipe checks all of the boxes.

Easy to prepare, hearty, inexpensive, healthy, the kids even eat it! Ground turkey, white beans, green chiles, chicken broth, cumin and more.

It’ll keep for 2-3 meals. Great to bring to potlucks and holiday gatherings.

14) Copycat Panera Chicken and Wild Rice Soup

Prep Time15 mins
Cook Time45 mins
Total Time1 hr
Servings8 servings
IngredientsCooking Instructions

Ingredients

  • Ingredients
  • 1 rotisserie chicken (meat pulled and shredded)
  • 2 boxes Uncle Ben’s 5-Minute Long Grain and Wild Rice (use about 1 1/3 boxes with seasoning packets)
  • 2 tablespoons butter
  • 2 stalks celery (diced)
  • 1 carrot (diced)
  • 1/3 cup onion (diced)
  • 3 cloves garlic (minced)
  • 64 ounces chicken broth
  • 1 cup heavy whipping cream
  • 2 tablespoons all-purpose flour (optional, for thickening)
  • 1/4 cup cold water (optional, for thickening)

Cooking Instructions

  1. Instructions
  2. Prepare the wild rice according to package directions, including the seasoning packet. Shred the rotisserie chicken while the rice cooks.
  3. Melt butter in a large soup pot over medium heat. Add celery, carrot, and onion and cook 5 to 8 minutes, until softened.
  4. Add the minced garlic and cook for 1 minute, stirring constantly.
  5. Pour in the chicken broth and bring to a gentle simmer. Add the shredded chicken and cooked wild rice.
  6. Simmer for 20 minutes so the flavors meld.
  7. During the last 10 minutes, stir in the heavy cream. If using the optional thickener, whisk flour with cold water and stir it in with the cream.
  8. Keep at a gentle simmer until thickened and heated through. Serve warm.
Notes: Use the rice seasoning packet because it provides much of the Panera-style flavor. Add heavy cream near the end so it does not curdle. Keep the soup at a gentle simmer rather than a hard boil after adding cream. Rotisserie chicken gives the soup deeper flavor and saves prep time.

My daughter is OBSESSED with Chicken and Wild Rice Soup at Panera. I thought it would take hours to recreate, but I was wrong!!

Chicken, wild rice, veggies, creamy broth, you’re done!! Makes a full pot for less than the cost of two bowls at Panera.

We eat this recipe on repeat from October-March.

  4. Spread a thin layer of sauce in the bottom of the slow cooker.
  5. Layer half the frozen ravioli, half the sausage, sauce, and mozzarella. Repeat layers one more time.
  6. Cover and cook on low for about 3 1/2 hours or high for about 1 hour 45 minutes, until ravioli is tender and cheese is melted.
  7. Let sit for about 10 minutes before serving so the layers scoop cleanly.
Notes: Use frozen ravioli, not fresh, so it holds up in the slow cooker. Brown and drain the sausage first so the casserole does not get greasy. Grease the crockpot insert because melted cheese sticks around the edges. Rest briefly before serving for cleaner scoops.

You don’t have to boil the ravioli to make this dish!! Literally dump frozen ravioli into slow cooker along with ground beef, shredded mozzarella and a jar of marinara.

Perfect for Easter or Christmas when you’re making a ton of other dishes, but want to serve pasta. Teens think it’s so fancy LOL.

IngredientsCooking Instructions

Ingredients

  • Ingredients
  • 1 pound ground beef
  • 1/2 yellow onion (finely chopped)
  • 1 teaspoon minced garlic
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 28 ounces diced tomatoes (undrained)
  • 2 1/2 cups pasta sauce
  • 2 1/2 cups chicken broth
  • 3 cups dry mostaccioli pasta (or penne)
  • 1 cup shredded mozzarella cheese

Cooking Instructions

  1. Instructions
  2. Brown the ground beef, onion, and garlic in a skillet over medium-high heat until beef is cooked through and onion is soft. Drain fat.
  3. Transfer beef mixture to a 4-quart or larger slow cooker. Add diced tomatoes with juice, pasta sauce, chicken broth, basil, and parsley. Stir to combine.
  4. Cover and cook on high for 3 hours, until the sauce deepens and thickens.
  5. Stir in dry mostaccioli and push pasta down into the sauce. Cover and cook on high for 20 minutes.
  6. Stir thoroughly from the bottom up, then cook 15 to 20 more minutes, until pasta is tender.
  7. Sprinkle mozzarella over the top, replace lid, and let sit on high for 5 minutes until melted. Serve immediately.
Notes: Add the pasta dry near the end so it cooks in the sauce without getting mushy. Stir halfway through the pasta cook time so the bottom noodles do not stick. Use chicken broth instead of water for better flavor. Serve right away because the pasta continues to absorb sauce as it sits.

Spaghetti and meatballs is one of our kids’ favorite dinners. This version skips the 20 minute wait for dinner and the trip to the oven, plus preheating and dirty dishes.

Simply toss all of your uncooked spaghetti and meat sauce into your slow cooker and add melted cheese on top. When the spaghetti is cooked through it’s ready to enjoy!

This one reheats well so we love to make it on other days for a busy Tuesday night dinner.

17) Crock Pot Chicken Fajitas

Prep Time20 mins
Cook Time5 hrs
Total Time5 hrs 20 mins
Servings4 servings
IngredientsCooking Instructions

Ingredients

  • Ingredients
  • 2 pounds boneless skinless chicken breasts
  • 3 bell peppers (sliced)
  • 1 large yellow onion (sliced into half-rings)
  • 1/2 cup salsa
  • 3 tablespoons fajita seasoning
  • 2 tablespoons olive oil (divided)
  • 1 lime (juiced)
  • 3 cloves garlic (minced)
  • 1 teaspoon salt
  • 8-10 flour tortillas (for serving)

Cooking Instructions

  1. Instructions
  2. Place sliced bell peppers and onion in the bottom of the slow cooker. Drizzle with 1 tablespoon olive oil and toss lightly.
  3. In a small bowl, combine fajita seasoning, remaining olive oil, minced garlic, and lime juice into a loose paste. Coat chicken breasts on all sides.
  4. Place seasoned chicken on top of the vegetables and pour salsa over everything.
  5. Cover and cook on low for 4 to 5 hours or high for 2 to 3 hours, until chicken reaches 165°F and shreds easily.
  6. Remove chicken to a cutting board and shred with two forks. Return to the slow cooker and stir with peppers, onions, and cooking liquid.
  7. Taste and adjust salt and lime juice. Broil filling 3 to 5 minutes on a foil-lined sheet pan if you want extra caramelization.
  8. Warm tortillas and serve with desired toppings.
Notes: Layer peppers and onions under the chicken so the chicken does not sit directly in pooled liquid. Apply seasoning directly to the chicken for better flavor. Check early if your slow cooker runs hot so the chicken does not get stringy. Warm tortillas before serving so they fold without cracking.

These take about 6 minutes of my time at 7 in the morning. That’s it.

Chicken, peppers, onions, seasoning, it’s that easy. Then they sit in the slow cooker all day and are ready by dinner.

When they’re done the chicken is super tender. My son asks for these on repeat.

You can serve these fajita fixings over rice or in a tortilla with all of your favorite toppings.

18) Crockpot Cheesy Potatoes

Prep Time15 mins
Cook Time2 hrs 5 mins
Total Time2 hrs 5 mins
Servings10 servings
IngredientsCooking Instructions

Ingredients

  • Ingredients
  • 30 ounces frozen shredded hashbrowns (thawed)
  • 2 cans cream of chicken soup
  • 8 ounces sour cream
  • 1 1/2 cups shredded cheddar cheese (divided)
  • 1 cup milk
  • 1/2 cup yellow onion (diced)
  • 4-5 tablespoons butter

Cooking Instructions

  1. Instructions
  2. Spray the inside of a 6-quart slow cooker with cooking spray.
  3. Combine thawed hashbrowns, cream of chicken soup, sour cream, 1 cup cheddar, milk, and diced onion directly in the slow cooker. Stir until evenly mixed.
  4. Dot the top with butter, or melt the butter and stir it in.
  5. Cover and cook on high for 2 hours without lifting the lid.
  6. Sprinkle remaining 1/2 cup cheese over the top. Replace lid for 5 minutes, until cheese melts.
  7. Serve straight from the slow cooker.
Notes: Thaw the hashbrowns first so extra water does not thin the sauce. Use two cans of cream of chicken soup for the creamiest texture. Reserve some cheese for the top so the finished potatoes have a fresh melted layer. Avoid opening the lid during cooking because it adds time.

I can’t believe I waited so long to share this recipe. It’s a staple at our house.

I’ve made this dish at Easter, Christmas, random Tuesday’s, the list goes on and on. It’s that versatile.

Recently, my daughter took this to a graduation party. People thought she made them at a restaurant.

We often take this dish to potlucks as well and it’s a favorite there too. This recipe has been shared with family and friends and made at their houses now as well.

You’ll be amazed how a bag of frozen hash browns, cream of chicken soup, sour cream, and shredded cheddar comes together to make one heck of a yummy side!

19) Crock Pot Baked Potatoes

Prep Time10 mins
Cook Time4 hrs
Total Time4 hrs 10 mins

IngredientsCooking Instructions

Ingredients

  • 4 pounds russet potatoes (about 6 to 8 medium)
  • 2 tablespoons olive oil
  • Salt (to taste)

Cooking Instructions

  1. Scrub potatoes clean and dry well.
  2. Pierce each potato several times with a fork or knife.
  3. Rub potatoes all over with olive oil and sprinkle generously with salt.
  4. Place potatoes directly in the slow cooker with no foil and no water.
  5. Cook on High for 3 to 4 hours or Low for 6 to 8 hours, until a fork slides in easily.
  6. Serve hot with butter, sour cream, cheese, bacon, chives, or your favorite toppings.
Notes: Choose potatoes that are close in size so they finish at the same time. Do not add water and do not wrap the potatoes in foil; the dry slow cooker method gives better skin texture. Store leftovers in the refrigerator for up to 4 days and reheat in the microwave or oven.

Ok, technically, this recipe requires zero effort. Just toss in some potatoes and let them cook.

That’s it! This is perfect when it’s hot outside and you don’t want to heat up your oven.

Just pop these babies in the crock pot and enjoy super fluffy potatoes later on. To make them, simply scrub your russets and wrap in foil and cook for 8 hours.

Serve with your favorite baked potato toppings. We often set out several toppings for a DIY potato bar.

Chili, sour cream, bacon, butter, cheese, the options are endless!

20) Grape Jelly Meatballs

Prep Time5 mins
Cook Time4 hrs
Total Time4 hrs 5 mins
Servings12 servings
IngredientsCooking Instructions

Ingredients

  • 32 ounces frozen fully cooked meatballs (homestyle preferred)
  • 32 ounces grape jelly
  • 12 ounces chili sauce (Heinz chili sauce or similar; BBQ sauce may be substituted)

Cooking Instructions

  1. Pour the grape jelly and chili sauce into the slow cooker insert. Stir them together until mostly combined. The jelly will still look a little lumpy at first and will melt as it heats.
  2. Add the frozen fully cooked meatballs directly to the slow cooker. Stir until the meatballs are coated in the sauce.
  3. Cover and cook on low for 4 hours or on high for 2 hours, until the meatballs are hot all the way through and the sauce is thick and glossy.
  4. Stir every 45 to 60 minutes if you can. This helps the sauce coat evenly and prevents the sugary sauce from building up on the bottom of the slow cooker.
  5. Once the meatballs are hot, switch the slow cooker to warm for serving. Serve with toothpicks as an appetizer, or spoon over buttered egg noodles for dinner.
Notes: Use homestyle or plain frozen meatballs if possible. Italian-style meatballs have stronger seasoning that can compete with the grape jelly and chili sauce. Heinz chili sauce is the classic choice. Do not confuse it with sriracha or Asian chili sauce. BBQ sauce can be used instead of chili sauce for a smokier flavor. If doubling the recipe, use a larger slow cooker or split the batch between two slow cookers so the meatballs heat evenly.

I know, they sound weird, right? Well, not only do they NOT taste weird, they’ve been around for over 40 years and are one of the best crockpot appetizers you’ll find!

Just toss frozen meatballs and grape jelly + a few other ingredients into your crockpot and serve later on. They’re so good, you’ll be licking your fingers.

See, I knew I sounded weird! We like to serve these at parties but we’ve eaten them for dinner on cold Iowa mornings when my husband just wanted something hearty.

They reheat really well in the morning so you can scoop out a couple and eat them cold if you like. My husband’s a morning person and loves to scoop a couple out of the crock pot early in the am and take them into the living room.

Gigi sits by the slow cooker hoping you spill one!

IngredientsCooking Instructions

Ingredients

  • 1 6 oz. bag fresh baby spinach, roughly chopped
  • 1 10 oz. can quartered artichoke hearts, chopped and drained
  • 1 8 ounce brick low-fat cream cheese, cubed or softened
  • 1 cup sour cream
  • 8 oz. Mozzarella cheese (shredded)
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic (minced)
  • s&p to taste

Cooking Instructions

  1. Combine all ingredients minus spinach, salt and pepper into a large bowl
  2. Chop spinach into preferred size. I usually do 1×2 inch pieces
  3. Add spinach to large bowl with other ingredients
  4. Give mixture a good stir and place in 4 quart or larger crock pot
  5. Heat on high 1-2 hour or low 2-4, stirring every 30 minutes to 1 hour.
  6. Serve out of crock pot or transfer to serving dish. Serve with tortilla chips or pita chips. Enjoy!

It takes 2-3 hours to get warmed through but after that it stays nice and warm and people can help themselves throughout the party. Just serve it with crackers or chips and everyone will love it.

Artichokes, spinach, cream cheese, sour cream, parmesan, it’s all combined into a dreamy dip.

22) Crock Pot Apple Crisp▼

22) Crock Pot Apple Crisp

Prep Time10 mins
Cook Time2 hrs 30 mins
Total Time2 hrs 40 mins
Servings8 servings
IngredientsCooking Instructions

Ingredients

  • 2 cans apple pie filling (21 ounces each)
  • 1/4 to 1/2 cup caramel ice cream topping
  • 1 box yellow cake mix (15.25 ounces, dry)
  • 1/2 cup butter (melted)
  • Vanilla ice cream or Cool Whip (for serving)

Cooking Instructions

  1. Spray the inside of a 4- to 6-quart crock pot with cooking spray.
  2. Pour both cans of apple pie filling into the bottom and spread evenly.
  3. Drizzle caramel sauce over the apple filling.
  4. Sprinkle dry cake mix evenly over the top. Do not stir.
  5. Drizzle melted butter evenly over the cake mix, covering as much surface as possible.
  6. Lay 1 to 2 paper towels across the top of the crock pot and place the lid on top.
  7. Cook on High for 2 to 2 1/2 hours, until hot and set.
  8. Serve warm with vanilla ice cream or Cool Whip.
Notes: Do not stir the layers; the dry cake mix and butter form the topping as it cooks. Paper towels catch condensation so the topping does not get soggy. The topping softens after refrigeration, so this is best served fresh. Leftovers keep refrigerated for 3 to 4 days.

I love apple pie but it’s a little involved. This version of apple crisp is dreamy and takes ZERO effort.

Simply slice up some apples and add cinnamon + brown sugar for flavor and top with buttery oats. Let it cook for about 2-3 hours and serve warm with a heaping dollop of vanilla ice cream.

You’ll be kicking yourself for not making more!
