Mini M&M’s and Chocolate Chip Cookies Recipe
Hey there! It’s Spring, and not quite summer, so time to enjoy those last bits of heavy desserts while we can without feeling guilty about it, right? Kidding, only kidding – we enjoy them year ’round around here. 😉
Anyhow, it was rainy in Iowa yesterday and all I could think about was some chocolate cookies. Like, ooey, gooey m&m cookies – with chocloate-melt-in-your-mouth cookies. So, I whipped some easy chocolate chip cookies up … and they were simply delicious. You could really make this your go-to cookie recipe – In fact, I bet you do!
This recipe is fun for the kids, too as they’re like a monster cookie without the oatmeal, so there’s literally nothing healthy snuck in – I promise. Just mini m&m’s and mini chocolate chips make these delicious morsels what they are and they are fantastic. And, they have a secret ingredient – the Jell-O Pudding makes these chewy – like the chewy Chips Ahoy you buy from the store – seriously knock out good!
They’re easy, too. I have to tell you though that baking racks are a must-have for this recipe as they literally finish cooking and form themselves on the baking rack. I love these ones, but this one here is a #1 best seller at Coupon Cravings due to the price (you can’t beat that price, can you?!)
Here’s how to whip this recipe up:
Gather your ingredients:
- 1 cup butter, softened (2 sticks)
1 cup granulated sugar
1 cup packed brown sugar
2 large eggs
1 teaspoon pure vanilla extract
3 cups all purpose Flour
1/2 cup vanilla instant pudding mix (about 2/3 of the larger box)
1 teaspoon baking soda
1 teaspoon salt
2 cups mini chocolate chips
1 cup Mini M&M’s
Preheat oven to 350 degrees F. and line two large baking sheets with parchment paper. Personally, I think that parchment paper is the key to baking. This way your cookies will stay light on the bottoms and chewy – plus, it cuts down on cleanup time dramatically.
In a large mixing bowl, cream together the butter and sugars well. I use my KitchenAid, but you could use a handmixer as well.
Add egg, vanilla and mix until well combined.
Add the flour, instant pudding mix, baking soda and salt and mix in until just combined on low speed.
Add in the mini chips and m&m’s and stir in with a wooden spoon until mixed. Can you say …. delicious?!
Using your hands, make 2 inch round balls and place on the parchment paper. You could use a cookie scoop too.
Bake for 15 minutes.
Remove cookies from baking sheet right away and place on baking cooling racks to finish hardening up.
You’ll have about 40 cookies when you’re done. Because you’ll actually have 45 cookies, but 5 will get eaten – I promise this will happen.
