Are you looking for a quick breakfast that can be made mostly the night before and tastes like you've been slaving over it all morning? This is that one! This easy cinnamon roll recipe includes five ingredients, it's crazy inexpensive and it's one you prepare the night before and bake in the morning so it's super simple to make, too! Quick Breakfast Idea: Caramel Cinnamon Rolls

Every once in awhile I need breakfast ideas that are easy, and my whole family loves because it's nice to have a big, fancy meal in the morning. But, to be honest, the weekends, when we usually have time for these kids of meals are usually crazy busy and therefore, it's tough to work this out. This recipe is one of my favorite breakfast recipes to make though as not only is it incredibly easy, but my kids love it, too. And, every person that's ever had it just goes crazy. It's one of those easy breakfast ideas that no one will believe that you even made it, let alone, that it was as simple as it was. I mean, it only has five ingredients.  😀

This is also a “breakfast food” that ends up being breakfast for dinner quite often as well. Throw some bacon on the side, and there you have it – dinner!

Just check out how EASY these are to make:

First, gather your ingredients, which include:

  • 1 stick butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 cup vanilla ice cream
  • 1/2 (12-count) Bag Frozen Rhodes Cinnamon Rolls

Combine butter and vanilla ice cream in a saucepan and melt. Add sugars and heat to boiling, over medium high heat constantly stirring with a whisk. Bring to a rolling boil while whisking the entire time.

Keep at a roiling boil for oh, say two or three minutes. You're actually making caramel that will thicken as it stands.  🙂

Remove the saucepan from the burner and let sit for 15 minutes or so to cool down. Once cooled put this mixture in to the refrigerator for an hour or so on a potholder. Spray glass baking dish (like this one) and arrange six frozen cinnamon rolls evenly in the dish.

If you like less gooey-ness, you could use 12 rolls. It will be plenty for twelve rolls, I just love to give the rolls more wiggle room in the baking dish, so I just do six. Totally up to you. Do, however, give the frozen rolls atleast 2 inches on each side for room to expand or as much room as your dish will allow.

Pour caramel mixture over the rolls and set in the oven overnight. Store the packet of icing that comes with the rolls in the fridge. You'll use the frosting on top of the rolls once they're cooked in the morning — I know! Scandalous!


In the morning do not take the rolls out of the oven. They will remain in the oven while preheating. Didn't I say this was the easiest breakfast recipe ever?! Cook for 20-30 minutes at 350 degrees until browned on top. Like I said, I generally halve this recipe and make six cinnamon rolls at a time. When I do that, for example, I cook them for 25 minutes total from the time I turn on the oven.

  8. Pour cold caramel mixture over the rolls and set in the oven overnight.
  9. Store the packet of icing that comes with the rolls in the fridge overnight. You'll use that on top of the rolls once they're cooked in the morning.
  10. In the morning do not take the rolls out of the oven.
  11. They will remain in the oven while preheating.
  12. Bake for 20-30 minutes at 350 degrees until browned on top.

  14. Frost those puppies right when you take them out of the oven. Yum!

    Could I put the caramel on the bottom with pecans and bake this way?? I was thinking sticky buns

      I actually recommend making them the way I have laid out in the recipe, just because the caramel makes them sticky anyways. If you want them “extra sticky” you could always double the caramel!
