Cut chicken tenderloins into 1- to 2-inch pieces and place in the slow cooker.
In a measuring cup or small bowl, stir together pineapple juice, brown sugar, and soy sauce until mostly dissolved.
Pour sauce over chicken. Cover and cook on low for 6 hours.
Serve chicken over cooked white rice and spoon extra sauce from the slow cooker over the top.
Sprinkle with sesame seeds if desired.
Notes
Chicken tenderloins cook evenly and stay moist, but chicken breasts or thighs can also work if cut into similar pieces. Do not skip the pineapple juice because it adds both flavor and tenderness. Spoon the sauce from the bottom of the slow cooker over the rice. Reduce brown sugar to 2 tablespoons if you prefer it less sweet.
