Beef and Cheese Enchiladas

Easy enchiladas for the weeknights when you're busy. These can be made ahead, too.

Ingredients

  • 1 pound ground beef
  • 1 can refried beans
  • 1 can enchilada sauce
  • 2 cups mild cheddar cheese
  • 10 flour or corn tortillas

Instructions

  1. Brown ground beef
  2. Drain fat and add refried beans
  3. Spoon mixture onto enchiladas
  4. Roll left side of enchilada on top of mixture and roll over seam side down into greased 9x13 dish
  5. Pour enchilada sauce over enchiladas
  6. Sprinkle cheese over enchiladas
  7. Cover and bake for 25 minutes at 350°
  8. Serve with rice, sour cream and shredded lettuce
