This Salsa with Avocado takes about 10 minutes to make and is a hit appetizer to bring to a party

corn and black bean salsa with avocado

Servings 5 cups

Ingredients

  • 2 cans black beans
  • 1 can shoe peg corn
  • 1 can original flavor Rotel
  • 1 cup red onion, diced
  • 4 T olive oil
  • 4 T lime juice
  • ¼ c fresh cilantro
  • tsp cumin
  • ½ t salt
  • 2 avocados chopped and diced

Instructions

  1. Drain and rinse black beans and corn in a colander
  2. Pour Rotel over clean beans and corn to drain
  3. Transfer to a bowl and mix in remaining ingredients
  4. Chill for a few hours and serve with chips
  5. Add avocado at the last chance you've got
