Eggnog Dessert Recipes: Delicious Eggnog Cookies

These eggnog cookies are so moist and absolutely delicious.

Ingredients

  • 1 c. softened butter
  • 1 c. sugar
  • 1 c. eggnog
  • 1 egg beaten
  • 3 and 3/4 c. flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. nutmeg
  • 1 tsp. vanilla
  • Frosting:
  • 1 and 1/2 c. powdered sugar
  • 1/4-1/2 c. eggnog (to spreading consistency
  • 1 tsp. light Karo Syrup
  • 1 tsp. vanilla

Instructions

  1. Mix together butter and sugar

  2. Add in eggnog and egg

  3. Add flour, baking powder, baking soda, salt and nutmeg

  4. Chill for atleast one hour

  5. Drop by teaspoonfuls (I rolled mine for a second) onto greased baking sheet

  6. Bake at 350 degrees for 8-10 minutes

  7. When you pull them out out the oven, push down on the top of the cookie with the bottom of a greased flat bottom glass to flatten into a cookies shape (do NOT skip this part!)

  8. Cool on drying rack for minimum of one hour

  9. Frost with eggnog frosting and sprinkle with nutmeg (the karo syrup makes the frosting harden when dry)

Recipe Notes

You absolutely have to flatten the cookies with the bottom of a cup right when they come out of the oven when they are still warm. 

The cookies will have to sit for atleast an hour for the frosting to dry completely before being stacked.
