Easy Breakfast Casserole Recipe

  • Ingredients:
  • 5 eggs
  • 1/2 cup milk
  • 3 cups of frozen hashbrowns thawed
  • 1/3 c. greens onion sliced
  • 1/2 green pepper diced
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1 1/2 cups mild cheddar cheese
  • 1 cup diced ham


  1. Stir together eggs and milk and salt and pepper.
  2. Combine the hashbrowns, green onions, cheese, green pepper and ham.
  3. Pour egg and milk mixture over hashbrown mixture in a bowl and mix well.
  4. Pour into a square dish (a pie plate works well, too)
  5. Bake at 350° for 40-50 minutes uncovered, or until casserole is set when you try and wiggle it and a toothpick comes out "clean"
  6. Let the breakfast casserole sit for 5 minutes or so to let it harden up a bit.
  7. Cut into pieces and serve - will serve 6-8 people.
  8. *** If you prepare this the night before you'll need to add time to your baking time. Also, keep the dry and wet ingredients separate until ready to put in the oven and then combine them.
