Pulled Chicken Recipe for Crockpot Shredded Chicken Tacos

This recipe for Crockpot Shredded Chicken Tacos doesn't get any easier with only four ingredients and being made in the crockpot!

Ingredients

  • 2 chicken breasts on butterfly trimmed and cut in half
  • 1/8 cup taco seasoning about one packet
  • One Can Rotel
  • 1/4 diced yellow onion
  • + Fixing and condiments for tacos and/or quesadillas

Instructions

  1. In a four quart (or larger) Crockpot layer your boneless chicken breasts on the bottom.
  2. Sprinkle on the taco seasoning.
  3. Add your can of Rotel. Do not drain the Rotel prior to adding!
  4. Add diced onion
  5. Cover the crockpot and cook on high for three to four hours, or on low for six to eight hours. Don't forget to check the temp of your shredded chicken taco meat with your meat thermometer!
  6. Shred the chicken using a hand mixer or forks.
  7. Finally, serve your pulled chicken with tortillas, shredded cheese, shredded lettuce, sour cream, and all of the other fixings that you'd like.
