Corn and Black Bean Salsa

  • 2 cans black beans
  • 1 can shoe peg corn
  • 1 can original flavor Rotel
  • 4 T olive oil
  • 4 T lime juice
  • 1/4 c fresh cilantro
  • 1 1/2 tsp cumin
  • 1/2 t salt


  1. Drain and rinse black beans and corn in a colander, Pour Rotel over clean beans and corn to drain. Transfer to bowl and mix in remaining ingredients Chill for a few hours and serve with chips.
