Foil Packet Dinner: Shrimp Boil Packets

Ingredients

  • 10 red potatoes average size or about 3 pounds -- works out to about 2 1/2 potatoes per packet
  • 1 ear of corn cut into a third and the thirds cut into halves
  • 1/2 ring of Andouille sausage cut into 1/2 inch pieces -- If the kids in your family don't like spice either chop these smaller or leave it out completely (although I'd be so sad if you did the latter :-D )
  • 24-30 pieces of shrimp raw, deveined and shell removed
  • 1/2 of a lemon
  • 2 T Old Bay Seasoning
  • 2 T minced garlic
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 3 T melted butter + 4 T melted butter for dipping

Instructions

  1. Boil the corn and cubed potatoes for ten minutes or so, then rinse and drain.
  2. In a large bowl, combine the shrimp, potatoes, corn and sausage... and then season with the remaining ingredients, leaving 4 T butter for heating later.
  3. Place a quarter of the mixture onto a large piece of foil, assembling four packs, start the long ways, then seal the ends by rolling from the bottom up.
  4. Place the foil packs on a preheated grill for 10 minutes, flip and grill for 5-6 more minutes or bake in a 400 degree oven for 20 minutes, or until the shrimp is no longer pink.
  5. ** While these are baking heat remaining 4T butter in a small saucepan on medium/low. As the butter melts it will start to turn golden brown, You're making the best dipping sauce for the shrimp and potatoes
  6. Enjoy the shrimp foil packets with the butter dipping sauce. YUM!
