We recently had our son's 8th birthday and one of his favorite meals is walking tacos. Well, and shrimp… but shrimp wasn't in the ‘ol budget for 30 people… so we settled on walking tacos. I love serving easy entertaining meals like walking tacos because everyone loves them… it's like hamburgers… you just can't go wrong.

But, knowing how much of each item to serve is what can sometimes be a little tough. To give you an idea, for 18 adults and 12 kids, ages 4 to 9, I made 7 pounds of ground beef and had two pounds leftover to freeze. I served the meat in two crockpots (this size works well and gives plenty of room). I don't mind having taco meat leftover though as tacos and Mexican food are popular menu items around these parts. So, I guess you could figure about 6 walking tacos per pound of taco meat.

For lettuce for that large of a group I got the crazy large bag of romaine lettuce from Sam's Club, but I must say that I prefer using shredded lettuce over romaine lettuce – I'll remember that for next time when I become mega lazy and so “over” birthday planning and take an “easier” shortcut… And, I had loads left, so I would say two smaller bags of shredded lettuce would have been adequate.

Having the smaller bags of Doritos is pretty imperative for individual servings of walking tacos so your guests can flip them on their side, cut off the top (which would actually be the side), crush their chips and be on their way walkin' down the walkin' taco line.  🙂 Most of all… enjoy your guests!

So, here's what I recommend for 30 people:

Easy Walking Tacos

  • 5 pounds ground beef
  • Taco Seasoning for 5 pounds ground beef
  • 40 1 oz. bags Doritos
  • 2 small bags shredded lettuce
  • 2 – 16 oz. containers sour cream
  • 6 cups mild shredded cheddar cheese
  • salsa
  1. Cook ground beef and store in crockpots
  2. Serve every ingredient buffet style and let guests make their own – perfect for entertaining a large crowd!

Hi there! I am so sorry that I missed your comment before.

If I were taking these to a park I would keep the meat in a large thermos. First I’d fill the thermos with boiling hot water and cover it for 15-20 minutes sealed shut. This way the thermos will get hot. Open the thermos, let the water out and fill the thermos with the taco meat. The taco meat should stay warm for quite some time.
