This Seven Layer Dip will Make Your Parties Easier
We love entertaining but it can be very time-consuming and super expensive if you don’t have a few easy and simple appetizers on the menu. Which is why this seven layer dip is always on the top of my mind whenever I’m thinking of must-serves that have to be on my list.
This Mexican Dip is not one of those classic New Year’s Eve appetizers that might be like a take one and walk away kind of an appetizer, but this is a more scoop and go, or it could even be scooped onto your plate and then devoured away from the appetizer station.
I love that! It feeds the hungriest people at the party and it’s also great for someone who just wants to graze. And, by the way, I don’t only limit this to a New Years Eve appetizer. This 7 Layer Bean Dip is perfect for Memorial Day, Fourth of July, Labor Day and all of the holidays. Heck, it is even called “dinner” at the Sorensen household sometimes. 🙂
Now, onto this easy, frugal refried bean dip. It’s seriously so easy, I feel bad even breaking it down, but here you go!
First you’re going to want to mix your sour cream and taco seasoning packet. This stuff is good enough to eat as a dip by iteslf, seriously. But you’re going to want to resist the urge. It’s even better when it’s all together in the layered dip.
Add your diced tomatoes to the bottom of a 9×13 glass dish and top with the sour cream mixture.
Next, spread your black olives. These can be used on only half or you can leave them out altogether. I know black olives are either a love or a hate thing. 🙂
Next spread the refried bean and salsa mixture. I told you this was crazy easy, right? Spread your mashed avocados onto the beans.
Sprinkle cheese on top of the dip and next toss a few green onions on top. Serve with tortilla chips. This dip is even better if you can let it sit for a little bit and let the flavors come together. Yum!
Seven Layer Dip
Ingredients
- 4 Roma tomatoes seeds removed and finely chopped
- 1 package taco seasoning
- 16 oz. sour cream
- 1 can sliced black olives drained
- 2 cans fat free refried beans
- 1 cup salsa of your choice
- 3 avocados
- ** splash of lime juice for avocados
- 2 cups colby jack cheese
- 5 green onions chopped
Instructions

Mix sour cream and taco seasoning, set aside. Mix salsa and beans, set aside. Layer ingredients in the order listed. You'll layer them in a 9x13 glass dish in this order: tomatoes, taco seasoning/sour cream mixture, black olives, refried beans/salsa mixture, avocado mixture, cheese and lastly green onions.

Serve with tortilla chips or corn chips on the side - enjoy!

** You can make this ahead of time, just be sure to seal it really well so the avocados don't turn brown.

Drop biscuits are fairly quick and easy to make if you want to serve them as an appetizer. It sure beats stale breadsticks.
