Easy recipes are the bomb in my book. I can promise you this quick & easy dessert recipe for rocky road pudding will take you into a whole new world of awesomeness. Desserts that are easy and have the least amount of ingredients possible are clutch, as this mama has got stuff.to.do! And, after making a dinner, lunch, breakfasts and snacks… well, easy is good sometimes.
This one is a huge hit at my home as both of the kiddos love chocolate pudding, but only one digs peanuts, so I am able to customize it a bit, leaving the peanuts out for one or two servings and putting them in for the other. A perfect way to please everyone all at the same time! Without turning on the oven, which is a huge bonus in the winter!
Anyways, there’s not much to this dessert, so here goes:
3.4 oz chocolate pudding box, prepared and set
1 1/2 cups mini marshmallows
1/2 cup chopped peanuts (I use a chopper like this and think it’s the best thing ever)
Mix all of the items together, and you’ve got one of the easiest, yummiest most simple desserts ever. And, a complete clone of Rocky Road ice cream. Yum!
This recipe makes about 4 cups of pudding. Perfect to make into individual size servings for a party or entertaining, too. You could even serve the peanuts and marshmallows on the side, too. Just a thought.
