The Instant Pot has been a gamechanger for our family. If you’re a busy family that’s on the go and you also need easy dinner ideas, this is the machine for you. Essentially, instead of waiting for a slow cooker to do its thing, everything is cooked at a more rapid pace.
And, I think you’ll find that the Instant Pot is the same thing as the electric pressure cooker that your mom or grandma used to have back in the day, just a more uniform way of making recipes because when you use the Instant Pot brand pressure cookers this pressure cooker is the same as every other one, making recipes easier to follow.

We’ve been trying all sorts of new Instant Pot recipes and are finding that pressure cooker chicken recipes are just as awesome as beef Instant Pot recipes.
This Huli Huli Chicken recipe has the same type of taste you would get from a grilled Huli Huli Chicken recipe, the only exception is that it’s the shredded chicken instead. Oh, and the obvious fact that there’s no need to start the grill, let the meat marinate, and all of those things.
So, here’s how I whip up this Instant Pot Hawaiaan Chicken recipe:
Huli Huli Pressure Cooker Chicken
- 4 boneless, skinless chicken breast; 1/2 inch cubes
- 1/3 cup pineapple chunks in pineapple juice (reserve pineapple chunks for garnish)
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 3 T tomato paste
- 2 t ginger; grated
- 1 T garlic; minced
- 1/3 cup vegetable or chicken broth
- green onions for garnish
- pineapple for garnish
- 1/2 teaspoon pepper
- White Rice to serve Huli Huli Chicken on top of (to preference)
Chop up those green onions, I love adding green onions to recipes, they add some really nice flavor.
Next, you’ll want to drain the additional juice. I like to have that in a separate bowl so I can drizzle it over the shredded chicken and rice. Some of my family members like a more juicier chicken, and some like it less juicy – personal preference, I guess. 🙂
Once your chicken is done, shredded and the rice is cooked, you’re ready to serve dinner – within the hour – a full dinner is ready, you’ve got to love that!
Huli Huli Pressure Cooker Chicken
Ingredients
- 4 boneless skinless chicken breast; 1/2 inch cubes
- 1/3 cup pineapple chunks in pineapple juice reserve pineapple chunks for garnish
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 3 T tomato paste
- 2 t ginger; grated
- 1 T garlic; minced
- 1/3 cup vegetable or chicken broth
- green onions for garnish
- pineapple for garnish
- 1/2 teaspoon pepper
- White Rice to serve Huli Huli Chicken on top of to preference
Instructions

Place chicken in pressure cooker with vegetable or chicken broth. Set to high pressure for 15 minutes (times vary per instant pot/pressure cooker). Release the pressure valve when time is complete for a quick release.

In a bowl, mix in pineapple juice, soy sauce, tomato sauce, brown sugar, ginger, and garlic (leaving the pineapple chunks out, you'll use those as garnish ). Whisk until well combined.

Set instant pot/pressure cooker to saute mode. Pour in mixture and stir well over chicken. The sauce will thicken over chicken. Top with pepper.

Use pineapple and pineapple juice from the can for your pineapple. Use the pineapple for garnish and juice for the recipe.

Once sauce is thickened around the chicken, shred the chicken and place in bowl over rice. Garnish with green onions and pineapple chunks.
