Moscow Mule Cocktail Recipe – The Strawberry Mule

One of my favorite things to do as a family is to dine out. But, I'm a mom, and a wife, and I almost never win that battle. So, it's become more and more fun for me to come up with ways to bring good food, awesome drinks, desserts and a fun environment into my home by introducing new items that make me feel like we're in a restaurant, but, nonetheless makes my family feel like we're at home and having just a regular ‘ol night where they can quickly return to their toys and activities.

In enters my new love of the P.F. Chang’s Home Menu items. See how I did that? I'm getting the best of both worlds. Not only am I getting a happy family but I'm also getting a meal made with authentic, made-from-scratch sauces and vibrant veggies! Yes! 

I especially enjoy that P.F. Chang’s Home Menu takes special care to ensure its meals are culturally authentic, creating sauces from scratch and offering flavors the way you would expect them at a restaurant.The recipes are inspired by the P.F. Chang’s Bistro and co-developed with restaurant co-founder Philip Chiang.

On another note, the taste of ginger goes so well with Asian food that I couldn't help sharing my new Moscow Mule cocktail as I eluded to in the images on this post. This Mule is unique in its own with a sweet, refreshing strawberry twist to the regular favorite. Still loaded with the delicious Ginger Beer, and a splash of vodka, if you’re feeling up for it, this complements the fancy dinner date night-in just perfectly. You can choose to use moscow mule mugs like these here or, just regular cups would work fine as well.

Here's how I whip up my new favorite Strawberry Moscow Mule:

1 cup ice
1.5 oz vodka (optional)
0.5 oz lime juice
5 oz ginger beer
3 strawberries, muddled
lime wedges (optional)

Muddle strawberries in the bottom of your Moscow Mule mug or other serving glass. Add your ice, vodka (optional) and lime juice. Add ginger beer until your mule mug is full and stir gently. Garnish with a fresh strawberry, lime slice and serve.

These are so, so, so refreshing. And, perfect for your easy dinner date night at home.

And, of course I’ll need to school you a little bit on my new favorite appetizer to make at home on a busy night.

The P.F. Chang’s Home Menu Chicken and Pork Dumplings are inspired by the traditional Chinese dumpling, made using customary pork shoulder, succulent dark meat chicken and offer a high meat-to-vegetable ratio. The chicken dumplings have a dark meat chicken, shredded cabbage, sliced scallions with a signature sauce packet and the pork dumplings are relatively the same, just with ground pork instead of the dark meat chicken. Delicious and perfectly paired with the Family Size helping of Chicken Fried Rice. I don't know that a mom can ever go wrong serving rice for dinner.
